The History of Recipes
Written cooking instructions as an idea can be found back into antiquity, certainly as far into history as the Egyptians, and maybe even further. Having said that, in the main part, these old recipes were just basic hieroglyphic recipes for meal preparation.
In an interesting twist, the oldest recipe discovered, according to experts in ancient history are a few stone tablets in Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel blissful. As we move into The time of the roman empire around 25BC a man called Apicius compiled a collection of documents describing recipes cooked by wealthy roman citizens. In his publication, Apicius recounts how the meals of wealthy Romans were separated into appetizers, main course and desserts, something that is very familiar to us today. Aspicius tells us how the cooks of his times made use of a good variety of spices and herbs, including some that we all recognise like basil, rue and parsley. Over the next few hundred years, the powerful families of Europe competed with each other to lay on the best banquets, and consequentially chefs and their collection of recipes increased in prestige. Notwithstanding that, it was during the nineteenth century that fine cooking and recipe publications became really popular. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the US, dedicated years of their lives to collecting, testing, and writing down recipes to help cooks of their time. When we get to the 1900s, cooking books were in high demand, due to better eduction, leisure time and a general increase in wealth. |
