FOR PORK

The History of Recipes
It is possible to follow the history of `recipes` far back into antiquity, in fact as far back into recorded history as the Egyptians, and quite possibly further than that. In practice though, generally, these ancient cook books were just very simple hieroglyphic or cunieform recipes for food preparation.
In fact, the most ancient recipe discovered so far, according to experts in ancient history is a series of clay tablets in Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel `blissful`. Later on, in The time of the romans around 25BC a roman called Apicius wrote some documents showing how to cook the recipes prepared by his fellow Romans. He recounts how the roman meals were separated into hors d`oeuvres, entrees and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius also informs us how the Roman chefs made use of many aromatic flavours, including a few that are still present in modern kitchens such as basil, rue and dill. Later on in the 1400s, people returning from the crusades brought back many new foods, spices and herbs from middle-east cuisine, including spices like rosemary and coriander. These new culinary innovations caused an outbreak in recipe manuscripts, some of which are kept safe in private libraries. For the decades that followed, the powerful and wealthy houses strove to serve the best banquets, and because of this the best chefs and their recipe collections increased in prestige. Notwithstanding that, it wasn`t until the 1800s that haute cuisine and recipe publications reached a high level of popularity. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, dedicated the best years of their lives to collating, trying out, and recording recipes for their fellow cooks to enjoy. By the time we get to the 20th century, cook books are starting to become popular due to higher levels of literacy, people having increased free time and a general increase in wealth. |
