The History of Recipes
We can trace the history of meal recipes back into distant history, certainly as far back into recorded history as the ancient Egyptians, and maybe further still. In practice though, in the main part, these old cook books were just primitive hieroglyphic or cunieform recipes for preparing food.
The truth of the matter is, the most ancient recipe discovered, according to experts is a series of ancient tablets in Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel `blissful`. As we move into Roman times 25BC a man called Apicius assembled a collection of scripts which described recipes enjoyed by the Romans. He describes how the meals were divided into appetizers, entrees and afters, something that is very familiar to us today. Aspicius also tells us how the Roman cooks were skilled in the use of a wide range of aromatic flavors, including a few that are still present in modern kitchens like thyme, mint and asafoetida. During the following few centuries, the powerful families of the West tried to serve up the most exotic meals, and consequentially cooks and their recipe collections became highly prized. Notwithstanding that, it was during the 1800s the formal cooking and recipe publications became popular. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, spent years to assembling, trying out, and recording recipes to help cooks of their time. By the advent of the 1900s, recipe books are increasing in popularity mostly as a result of better eduction, people having more free time and disposable income. The revolution that is television brought us celebrity chefs and the recipe books that accompanied them. Which brings us neatly to the present day and the invention of computers and the internet, permitting us all to access thousands of recipes just like those on sites such as this. |
