The History of Recipes
We are able to trace the history of meal recipes far back into the far past, in truth as far into history as the ancient Egyptians, and quite possibly further than that. However, mostly, these ancient records were just very simple hieroglyphic instructions for preparing food.
The truth of the matter is, the most ancient recipe discovered so far, according to Professor Solomon Katz, is a collection of clay tablets in ancient Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel exhilarated. As we move into Roman times 25BC a roman called Apicius created some documents which described recipes cooked by wealthy Romans. In his scrolls, Apicius describes how the roman meals were split into hors d`oeuvre, main course and afters, something that is very familiar to us today. This early Roman chef informs us how the cooks of his times used many aromatic flavours, including many that are still in use today such as basil, fennel and asafoetida. As we move on, we find two interesting recipe books which date from the fourteenth century ; one book entitled `Forme of Cury`, and another entitled `Curye on Inglish`. Amusingly, these are not about the curry that appears on menues today, but instead recipes for the types of food prepared by the cooks of the upper classes of the period. Later, in the fifteenth century, people returning from the crusades brought back many new spices and herbs from Arab cuisine, including basil and coriander. These new herbs and spices prompted an increase in manuscripts on cooking, some of which are kept safe in private libraries. By the advent of the 20th century, cookbooks were starting to become popular mostly due to higher levels of literacy, more leisure time and being a little richer. The revolution that is television gave us celebrity TV chefs and the accompanying recipe books. Which pretty much brings us to the present day and the invention of the internet, allowing everyone to access thousands of recipes like the ones you can find on sites such as the one you are reading now. |
