Chinese Smokey Ribs Recipe

Ingredients

6 lb pork spareribs
1 chinese dry marinade


Directions

Rub ribs thoroughly with the Chinese Dry Marinade. Let stand at room
temperature for 1 to 2 hours. Arrange ribs ends down on cooking grill
or place bones upright in rib rack. Smoke-cook until done. Brush ribs
with Chinese Barbecue sauce during the last few minutes of cooking,
then serve with remaining sauce.

The History of Recipes

We are able to trace the history of meal recipes far back into the distant past, at least as far as the ancient Egyptians, and possibly even further than that. Having said that, these, ancient cookbooks were just primitive pictorial, hieroglyphic or cunieform recipes for meal preparation.

Aspicius also recounts how the cooks of his times used many spices, including a few that will be familiar to modern cooks like thyme, fennel and asafoetida.

As we move on, there were two interesting books which date from the 14th Century : a cookery book published under the title `Forme of Cury`, and another entitled `Curye on Inglish`. Don`t be fooled by the titles though, these two books are nothing to do with the indian food that is familiar to us all today, but instead recipes for the types of food on the tables of the rich and powerful of that period.

Later, in the fifteenth century, people returning from the crusades brought us many spices and herbs from the East, such as basil and rosemary. These new culinary innovations led to an outbreak in recipe publications, many of which are kept safe in private collections.

During the next few centuries, the upper classes competed with each other to serve the most exotic meals, and as a result cooks and their collection of recipes were at a premium. Notwithstanding that, it was during the 1800s that haute cuisine and recipe collections reached a high level of popularity. Mrs Beeton in the UK, and the equally famous Fannie Farmer in the US, devoted their lives to collecting, testing, and publishing recipes to help cooks of their time.

By the advent of the 20th century, cookery books are in high demand, mostly due to increased literacy, people having more free time and having more disposable income.

The revolution that is television gave us cooking programs and the recipe books that accompanied them.
