The History of Recipes
Written cooking instructions as a concept can be found far back into distant history, at least as far back into recorded history as pharonic Egypt, and quite possibly further than that. Having said that, these, ancient recipes were just very basic hieroglyphic instructions for preparing food.
Fascinatingly, the oldest recipe discovered so far, according to historians are a few stone tablets in ancient Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel exhilarated. Progressing into The time of the roman empire around 25BC a roman called Apicius created some scripts describing recipes enjoyed by wealthy Romans. In his scrolls, he tells us how the roman meals were divided into starters, main meal and desserts, a very modern way of dining. Additionally, he informs us how the Roman cooks used a good variety of spices and herbs, including a few that will be familiar to modern chefs for example basil, rue and dill. As our culinary historical trip moves to more modern times we find a couple of interesting books which were published in the fourteenth century ; one book published under the title `Forme of Cury`, and another entitled `Curye on Inglish`. Don`t be fooled by the titles though, they are unconnected to the indian curry that we all know today, but instead descriptions of the types of meals prepared by the cooks of the rich and powerful of that period. In the 15th century, people returning from the crusades brought back many foods and herbs from middle-east cuisine, including spices like rosemary and coriander. These new culinary innovations led to an eruption in recipe books, most of which are kept safe in academic collections. When we get to the 1900s, cookbooks are in high demand, mostly as a result of higher levels of literacy, people having increased free time and having more money. The arrival of TV gave us cooking programs and the demand for the accompanying recipe books. Which brings us neatly to the present day and the invention of the internet, permitting everyone to access thousands of recipes such as those found on this site. |
