The History of Recipes
Experts have traced the existence of recipes far back into history, in fact as far as the early Egyptians, and maybe even further. However, mostly, these old cookbooks were just very simple hieroglyphic instructions for preparing meals.
Fascinatingly, the oldest recipe in existence, according to food historians is a series of clay tablets in Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel `exhilarated, wonderful and blissful`. As we move into The time of the roman empire around 25BC a roman called Apicius compiled some scripts describing recipes cooked by wealthy Romans. In his works, Apicius describes how the meals were divided into starters, entrees and afters, a very modern way of dining. He also tells us how the cooks of his times used a good variety of aromatic flavors, including a few you will know for example basil, mint and asafoetida. Moving our culinary historical trip onwards, there were a couple of interesting recipe books which appeared in the fourteenth century : a book called `Forme of Cury`, and another named `Curye on Inglish`. Surprisingly, they are nothing to do with the curry that we all know today, but instead descriptions of the types of food on the menues of the rich people of those days. In the 15th century, people returning from the crusades brought us many foods and herbs from Arab cooking, including spices like basil and rosemary. These new herbs and spices was responsible for a surge in manuscripts on cooking, the majority of which are kept safe in private collections. Over the following few centuries, the rich and powerful families of the West competed with each other to serve the most extravagent meals, and as a consequence, the best chefs and their collection of recipes could command a high salary. Nevertheless, it was during the 1800s that cooking and cookery books reached a high level of popularity. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the US, dedicated their lives to collecting, trying out, and writing down recipes common in their social group. When we get to the 1900s, cookery books were in high demand, mostly as a result of more people being able to read, people having increased free time and having more money to spend. |
