The History of Recipes
We can trace the history of `recipes` way back into the far past, at least as far back into recorded history as pharonic Egypt, and maybe further still. Having said that, generally, these ancient cookbooks were just primitive pictorial recipes for meal preparation.
In fact, the oldest recipe found, according to historians are a few stone tablets in ancient Sumerian which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel wonderful. Progressing into Roman times around 25BC a roman called Apicius assembled a collection of documents describing recipes prepared by his fellow Romans. In his scrolls, he recounts how the meals were split into appetizers, main course and afters, a very modern way of dining. This early Roman chef describes how the Roman cooks made use of a good variety of herbs, including some familiar names like basil, mint and asafoetida. For the next few years, the upper-class families of Europe competed with each other to serve up the most extravagent meals, and as a result the best cooks and their collection of recipes were much in demand. Nevertheless, it was during the nineteenth century that formal cookery and cookery books became popular. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated years of their lives to collecting, verifying, and writing down recipes to help cooks of their time. By the advent of the twentieth century, cooking books are in great demand, as a result of increased literacy, more leisure time and having more money. The introduction of the TV brings us TV cookery programs and the demand for the accompanying recipe books. Which brings us neatly up to date and the internet revolution, permitting us all to search through thousands of recipes such as those found on the site you are now reading. |
