The History of Recipes
We can follow the history of written recipes back into history, in fact as far into history as the ancient Egyptians, and possibly even further than that. Interesting though that is, generally, these ancient records were just basic pictorial instructions for preparing food.
In fact, the most ancient recipe discovered so far, according to experts is a collection of ancient tablets in ancient Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel wonderful and blissful. Later on, in The time of the romans around 25BC a man called Apicius compiled a few documents showing how to cook the recipes cooked by wealthy Romans. In his works, he recounts how the roman meals were split into appetizers, main meal and afters, a style of dining still practiced today. This early Roman chef recounts how the Roman chefs were skilled in the use of many spices, including some familiar names like thyme, mint and parsley. For the centuries that followed, the wealthy families of the West strove to serve up the most exotic meals, and because of this cooks and their recipe collections became highly prized. However, it was during the 19th century that cooking and recipe collections rose to prominence. Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, devoted much of their lives to collecting, testing, and writing down recipes to allow everyone to enjoy them. By the time we get to the 20th century, cooking books were greatly in demand mostly due to higher levels of literacy, more free time and disposable income. |
