Chipotle Chile Slaw Recipe

Ingredients

3 chipotle chilies
1 garlic clove
1 cup mayonnaise
1 salt and black pepper
1 few drops lemon juice
1/2 cabbage, coarsely shredded


Directions

If using dried chipotles, rehydrate by soaking in hot water until
softened. Using a mortar and pestle or food processor, mash or puree
chilies with garlic clove. Blend into mayonnaise. Stir mixture into
shredded cabbage, seasoning to taste with salt, pepper, and a few
drops of lemon juice if desired. Refrigerate until ready to serve.

The History of Recipes

Aspicius recounts how the cooks of Roman times used a good variety of aromatic flavours, including some that we all recognise for example basil, rue and asafoetida.

In the 15th century, knights returning from the crusades brought us a variety of foods, spices and herbs from the East, including spices such as coriander, parsley, and rosemary. The introduction of these new foods and spices created a torrent in books on cooking, the majority of which still exist in academic collections.

Over the next few hundred years, the wealthy families of Wesstern Europe strove to serve up the best banquets, and as a result chefs and their recipes were greatly in demand. Nevertheless, it wasn`t until the nineteenth century the formal cooking and cookery books really came of age. The Famous Mrs Beeton in the UK, and Fannie Farmer in the US, dedicated their lives to collecting, trying out, and writing down the recipes of their peers.

When we get to the 1900s, recipe publications are greatly in demand due to increased literacy, more spare time and having more money.

The arrival of TV brought us TV chefs and the spin-off recipe books.
