3 chipotle chilies
1 garlic clove
1 cup mayonnaise
1 salt and black pepper
1 few drops lemon juice
1/2 cabbage, coarsely shredded
Directions
If using dried chipotles, rehydrate by soaking in hot water until
softened. Using a mortar and pestle or food processor, mash or puree
chilies with garlic clove. Blend into mayonnaise. Stir mixture into
shredded cabbage, seasoning to taste with salt, pepper, and a few
drops of lemon juice if desired. Refrigerate until ready to serve.

The History of Recipes
Recipes as an idea can be traced way back into the distant past, certainly as far back into history as pharonic Egypt, and quite possibly further than that. However, these, ancient recipes were just simple pictorial, hieroglyphic or cunieform instructions for food preparation.
In an interesting twist, the most ancient recipe found, according to historians are a few tablets in the Sumerian language which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel `exhilarated, wonderful and blissful`. During the time of the Romans a man called Apicius compiled a few scripts showing how to cook the recipes cooked by wealthy Romans. In his works, Apicius tells us how the meals of wealthy Romans were separated into hors d`oeuvres, main course and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius recounts how the cooks of Roman times used a good variety of aromatic flavours, including some that we all recognise for example basil, rue and asafoetida. In the 15th century, knights returning from the crusades brought us a variety of foods, spices and herbs from the East, including spices such as coriander, parsley, and rosemary. The introduction of these new foods and spices created a torrent in books on cooking, the majority of which still exist in academic collections. Over the next few hundred years, the wealthy families of Wesstern Europe strove to serve up the best banquets, and as a result chefs and their recipes were greatly in demand. Nevertheless, it wasn`t until the nineteenth century the formal cooking and cookery books really came of age. The Famous Mrs Beeton in the UK, and Fannie Farmer in the US, dedicated their lives to collecting, trying out, and writing down the recipes of their peers. When we get to the 1900s, recipe publications are greatly in demand due to increased literacy, more spare time and having more money. The arrival of TV brought us TV chefs and the spin-off recipe books. And that pretty much brings us to the present day and the internet revolution, allowing everybody to search through thousands of recipes such as those found on sites such as the one you are reading now. |
