The History of Recipes
It is quite feasible to follow the history of recipes back into the far past, in truth as far back into history as ancient Egypt, and maybe further still. In practice though, generally, these old records were just very basic hieroglyphic or cunieform recipes for food preparation.
Interestingly, the most ancient recipe in existence, according to experts is a series of ancient tablets in Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel `blissful`. Progressing into The time of the romans around 25BC a man called Apicius created a few documents which described recipes enjoyed by the Romans. He recounts how the roman meals were separated into hors d`oeuvre, main meal and afters, something that is very familiar to us today. Aspicius recounts how the ancient chefs were skilled in the use of many different spices and herbs, including a few that are still present in modern kitchens for example basil, mint and dill. Later, in the 15th century, knights returning from the crusades brought us many new foods and herbs from Arab countries, including coriander, parsley, basil and rosemary. These new culinary innovations prompted an eruption in manuscripts on food, some of which are now in private cookery archives. During the next few hundred years, the rich families of Wesstern Europe tried to serve up the most exotic meals, and as a consequence, the best cooks and their collection of recipes became highly prized. Notwithstanding that, it wasn`t until the 19th century that formal cookery and recipe publications rose to prominence. The Famous Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, spent years to collating, testing, and recording recipes common in their social group. By the time we get to the twentieth century, cooking publications are increasing in popularity mostly as a result of more people being able to read, people having more leisure time and disposable income. |
