The History of Recipes
It is possible to read the history of written recipes back into history, in truth as far back into history as the ancient Egyptians, and possibly even further. Interesting though that maybe, sadly, these old cookbooks were just very simple pictorial, hieroglyphic or cunieform instructions for preparing meals.
Later on, in The time of the roman empire 25BC a man called Apicius compiled a few documents which described recipes enjoyed by the Romans. In his scrolls, Apicius describes how the roman meals were separated into starters, main meal and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef describes how the Roman chefs were skilled in the use of many aromatic flavours, including some that we all recognise such as basil, fennel and parsley. For the decades that followed, the wealthy families of the West tried to serve up the most exotic meals, and as a consequence, cooks and their recipes were greatly in demand. Even so, it was during the 19th century that formal cookery and cookery books really came of age. The Famous Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, spent years to collating, trying out, and writing down the recipes that were being prepared for the better households. The arrival of television brought us celebrity chefs and the recipe books that accompanied them. Which brings us neatly up to date and the internet revolution, allowing us all to access thousands of recipes like the ones you can find on sites such as the one you are reading now. |
