The History of Recipes
It is quite possible to track the history of transcribed cooking instructions back into the distant past, at least as far back as ancient Egypt, and maybe further still. Interesting though that maybe, these, ancient cook books were just very simple hieroglyphic recipes for meal preparation.
The truth of the matter is, the oldest recipe in existence, according to experts is a collection of stone tablets in Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel blissful. Progressing into The time of the romans around 25BC a man called Apicius assembled some documents detailing recipes enjoyed by his fellow Romans. In his publication, Apicius recounts how the meals were divided into hors d`oeuvres, main meal and desserts, something we still use today. Aspicius also tells us how the Romans used many herbs, including a few that will be familiar to modern chefs such as bay, fennel and asafoetida. Later, in the 15th century, the Crusaders brought back a variety of foods and herbs from Arab cooking, including basil and coriander. The introduction of these new herbs and spices caused an eruption in cookery books, most of which are kept safe in private collections. By the advent of the 1900s, recipe publications were highly popular mostly as a result of more people being able to read, people having more leisure time and disposable income. Like it or not, the introduction of TV brought us TV cooks and the recipe books that accompanied them. Which pretty much brings us to the present day and the invention of computers and the internet, permitting everyone to access thousands of recipes like the ones you can find on the site you are now reading. |
