The History of Recipes
We can read the history of written recipes way back into the distant past, in fact as far as early Egypt, and quite possibly further than that. Interesting though that is, sadly, these ancient cookbooks were just primitive pictorial, hieroglyphic or cunieform instructions for preparing food.
Progressing into Roman times around 25BC a man called Apicius assembled a few documents showing how to cook the recipes prepared by wealthy roman citizens. He recounts how the meals of wealthy Romans were separated into hors d`oeuvre, entrees and afters, something we still use today. Aspicius also describes how the Roman cooks used many different spices and herbs, including a few that will be familiar to modern chefs like bay, fennel and parsley. For the next few years, the powerful families of the West strove to lay on the most exotic meals, and consequentially the best chefs and their recipe collections were much in demand. However, it wasn`t until the 1800s that cooking and recipe books became really popular. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated their lives to assembling, testing, and publishing recipes to allow everyone to enjoy them. By the advent of the twentieth century, recipe books are starting to become popular mostly as a result of better eduction, people having increased spare time and having more disposable income. |
