The History of Recipes
It is possible to read the history of `recipes` way back into distant history, in truth as far back into history as the early Egyptians, and maybe even further. In practice though, these, old records were just simple pictorial recipes for preparing food.
In fact, the most ancient recipe discovered so far, according to Professor Solomon Katz, are a few stone tablets in Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel wonderful and blissful. Later, there were a couple of interesting cookery books dating from the 1300s : a recipe book published under the title `Forme of Cury`, and another named `Curye on Inglish`. Despite their titles, these books are unconnected to the indian food that is familiar to us all today, but instead descriptions of the types of food on the menues of the nobility of that period. Later, in the fifteenth century, knights returning from the crusades brought back many new foods, spices and herbs from middle-east cuisine, including spices such as basil and rosemary. The introduction of these new culinary ideas caused an eruption in publications on food, most of which are kept safe in private collections. For the decades that followed, the upper-class families of the West tried to serve the most exotic banquets, and because of this chefs and their collection of recipes were highly sought after. However, it wasn`t until the 19th century that fine cookery and recipe books reached a high level of popularity. The Famous Mrs Beeton in the UK, and the equally famous Fannie Farmer in the US, dedicated years of their lives to collating, verifying, and publishing recipes to help cooks of their time. By the time we get to the 1900s, cookery publications were increasing in popularity due to higher levels of literacy, increased leisure time and being a little richer. The arrival of television brings us celebrity chefs and the accompanying recipe books. And that brings us to the present day and the invention of the internet, allowing everyone to search through massive numbers of recipes like those on our web site. |
