The History of Recipes
Written cooking instructions as a concept can be observed far back into distant history, certainly as far back into history as early Egypt, and quite possibly further than that. However, these, early records were just basic hieroglyphic instructions for preparing meals.
In an interesting twist, the oldest recipe in existence, according to experts is a series of tablets in Sumerian which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel wonderful and blissful. During the time of the Romans a roman called Apicius created some scripts detailing recipes enjoyed by the Romans. In his works, Apicius tells us how the meals were separated into appetizers, entrees and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius recounts how the early Romans made use of a good variety of herbs, including some that we all recognise like thyme, mint and parsley. Moving our culinary historical trip onwards, we find a couple of recipe books which appeared in the fourteenth century ; a recipe book called `Forme of Cury`, and another, similary titled `Curye on Inglish`. Perhaps surprisingly, these two books are nothing to do with the indian food that is served today, but instead accounts of the types of meals on the tables of the upper classes of that time. In the 15th century, people returning from the crusades brought back a variety of foods and herbs from Arab cooking, including spices like parsley and basil. The introduction of these new foods and spices led to a surge in recipe publications, the majority of which are kept safe in private cookery archives. Over the next few hundred years, the powerful and rich competed to serve up the most exotic meals, and as a consequence, the best chefs and their recipe collections became highly prized. Nevertheless, it was during the 1800s that haute cuisine and cookery books became popular. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated years of their lives to collecting, verifying, and recording recipes to help cooks of their time. When we get to the 1900s, cookbooks are highly popular mostly as a result of more people being able to read, people having increased free time and disposable income. |
