The History of Recipes
Academics have traced the existance of recipes back into the far past, in truth as far as the Egypt of the Pharoahs, and quite possibly further than that. However, generally, these ancient recipes were just very basic hieroglyphic or cunieform instructions for food preparation.
Interestingly, the most ancient recipe found, according to experts in ancient history is a series of ancient tablets in the Sumerian language describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel blissful and exhilarated. As we move into Roman times 25BC a roman called Apicius compiled a few scripts detailing recipes prepared by wealthy roman citizens. In his works, Apicius tells us how the meals of wealthy Romans were split into hors d`oeuvre, main meal and desserts, a very modern way of dining. Additionally, he tells us how the Roman cooks made use of a wide range of herbs and spices, including some familiar names for example thyme, mint and dill. During the next few centuries, the rich and powerful families of Wesstern Europe competed to lay on the best banquets, and consequentially the best chefs and their recipe collections were highly sought after. Notwithstanding that, it wasn`t until the 19th century that fine cooking and recipe books really came of age. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated the best years of their lives to assembling, verifying, and writing down recipes of the day. By the advent of the 20th century, cookery books were highly popular due to better eduction, people having increased spare time and being a little richer. |
