The History of Recipes
Food historians have found proof that recipes existed far back into the far past, at least as far back into history as the ancient Egyptians, and maybe further still. Interesting though that is, these, ancient records were just primitive hieroglyphic or cunieform recipes for preparing food.
Interestingly, the oldest recipe in existence, according to Professor Solomon Katz, is a series of stone tablets in ancient Sumerian which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel blissful and exhilarated. Later on, in Roman times 25BC a roman called Apicius created a number of documents describing recipes prepared by wealthy roman citizens. In his scrolls, he recounts how the meals of wealthy Romans were divided into appetizers, entrees and afters, something we still use today. He also describes how the cooks of Roman times used a wide range of spices, including a few you will know such as thyme, rue and parsley. During the succeeding few hundred years, the families of Europe competed with each other to offer the most exotic banquets, and as a consequence, the best cooks and their collection of recipes were greatly in demand. However, it was during the 1800s the formal cooking and recipe books became popular. The Famous Mrs Isabella Beeton in the UK, and Fannie Farmer in the US, devoted their lives to assembling, testing, and writing down popular recipes of the day. By the arrival of the 1900s, cookbooks were in great demand, mostly due to more people being able to read, more leisure time and being a little richer. Like it or not, the introduction of television gave us TV cookery programs and the accompanying recipe books. And that neatly brings us to the present day and the internet revolution, allowing everybody to access thousands of recipes just like those on this web site. |
