The History of Recipes
We are able to track the history of written recipes far back into the far past, in truth as far back into history as the early Egyptians, and quite possibly further than that. However, mostly, these old records were just simple pictorial, hieroglyphic or cunieform instructions for food preparation.
The truth of the matter is, the most ancient recipe discovered so far, according to Professor Solomon Katz, are a few ancient tablets in the Sumerian language describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel wonderful and blissful. As we move on, we find a couple of interesting cookery books dating from the fourteenth century ; one book published under the title `Forme of Cury`, and another named `Curye on Inglish`. Surprisingly, these two books are unconnected to the curry that we all know today, but instead accounts of the types of food cooked for the rich and powerful. Later, in the fifteenth century, people returning from the crusades brought back many new foods, spices and herbs from middle-east cuisine, including spices like rosemary and coriander. These new herbs and spices led to an eruption in manuscripts on cooking, most of which are kept safe in private cookery archives. During the following few hundred years, the powerful and rich tried to serve the most exotic banquets, and because of this the best chefs and their recipe collections were highly sought after. Nevertheless, it was during the 19th century that cooking and recipe books reached a high level of popularity. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the USA, devoted their lives to collating, testing, and recording the recipes of their peers. The revolution that is television gave us celebrity chefs and the accompanying recipe books. Which pretty much brings us to the present day and the invention of computers and the internet, permitting everyone to access thousands of recipes like the ones you can find on this web site. |
