The History of Recipes
Experts have traced the existance of recipes far back into antiquity, in fact as far into history as early Egypt, and maybe further still. Interesting though that maybe, sadly, these early records were just simple pictorial, hieroglyphic or cunieform recipes for food preparation.
In an interesting twist, the most ancient recipe in existence, according to experts is a series of stone tablets in Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel blissful and exhilarated. Progressing into Roman times 25BC a roman called Apicius assembled a collection of scripts which described recipes cooked by the Romans. In his publication, he recounts how the meals of wealthy Romans were split into hors d`oeuvres, main course and afters, a style of dining still practiced today. Additionally, he tells us how the ancient Romans used many different herbs and spices, including many that are still in use today such as basil, fennel and parsley. Continuing our culinary historical journey, we have two books dating from the fourteenth century : a recipe book called `Forme of Cury`, and another titled `Curye on Inglish`. Surprisingly, these books are not about the curry that is popular today, but rather accounts of the types of food eaten by the upper classes of those days. Later on, in the 15th century, knights returning from the crusades brought back many new spices and herbs from Arab countries, including spices like basil and rosemary. These new foods and spices created a torrent in manuscripts on cooking, many of which still exist in private cookery archives. When we get to the twentieth century, cooking books are starting to become popular mostly due to more people being able to read, people having increased leisure time and disposable income. |
