The History of Recipes
It is quite possible to track the history of transcribed cooking instructions back into the far past, certainly as far back into history as ancient Egypt, and maybe even further. Interesting though that maybe, these, ancient cookbooks were just simple hieroglyphic instructions for meal preparation.
The truth of the matter is, the oldest recipe in existence, according to food historians is a series of tablets in the Sumerian language describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel `blissful`. Progressing into The time of the romans around 25BC a man called Apicius created a few documents detailing recipes enjoyed by the Romans. In his publication, Apicius recounts how the meals were divided into hors d`oeuvres, main meal and dessert, something that is very familiar to us today. Additionally, he recounts how the cooks of Roman times were skilled in the use of a wide range of aromatic flavors, including some that we all recognise for example bay, rue and dill. Moving on, we have a couple of recipe books which date from the 1300s : a cookery book called `Forme of Cury`, and another called `Curye on Inglish`. Although the titles sound familiar, these books have no connection with the indian food that appears on menues today, but instead accounts of the types of meals cooked for the rich and powerful of that time. Later, in the 15th century, knights returning from the crusades brought us a variety of spices and herbs from Arab cooking, including spices such as basil and rosemary. The introduction of these new herbs and spices created an explosion in recipe manuscripts, some of which are kept safe in private libraries. By the advent of the 1900s, cooking publications are highly popular mostly due to more people being able to read, increased leisure time and having more money to spend. Like it or not, the introduction of TV brings us TV cooks and the recipe books that accompanied them. Which brings us neatly to the present day and the internet revolution, allowing everybody to access massive numbers of recipes just like those on sites such as this. |
