The History of Recipes
We can trace the history of written recipes far back into the distant past, in fact as far back into history as the Egyptians, and maybe further still. However, mostly, these old recipes were just very simple pictorial, hieroglyphic or cunieform instructions for preparing meals.
Later on, in Roman times around 25BC a roman called Apicius created a few documents showing how to cook the recipes enjoyed by wealthy roman citizens. In his publication, Apicius describes how the roman meals were divided into hors d`oeuvre, main meal and afters, a very modern way of dining. Additionally, he informs us how the early Romans were skilled in the use of many herbs, including a few you will know like thyme, rue and parsley. For the next few years, the upper classes strove to serve the best banquets, and consequentially the best cooks and their recipes were highly sought after. Nevertheless, it wasn`t until the 19th century that formal cookery and recipe books rose to prominence. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, devoted much of their lives to collecting, verifying, and writing down recipes to allow everyone to enjoy them. By the advent of the twentieth century, cookery books are greatly in demand due to better eduction, people having more leisure time and being a little richer. |
