The History of Recipes
Transcribed cooking instructions as an idea can be found back into distant history, certainly as far back into history as the Egyptians, and maybe even further. However, in the main part, these early recipes were just simple hieroglyphic or cunieform recipes for meal preparation.
Progressing into Roman times 25BC a Roman scholar, called Apicius, assembled some scrolls detailing recipes enjoyed by wealthy roman citizens. He describes how the meals of wealthy Romans were separated into starters, main course and desserts, a style of dining still practiced today. Aspicius describes how the ancient cooks made use of many different herbs, including some that we all recognise such as bay, fennel and dill. Over the succeeding few hundred years, the wealthy families of Europe competed to serve the best banquets, and as a consequence, chefs and their recipes increased in prestige. Nevertheless, it was during the nineteenth century that cookery and recipe collections really came of age. The Famous Mrs Beeton in the UK, and the equally famous Fannie Farmer in the USA, dedicated years of their lives to assembling, verifying, and writing down popular recipes of the day. The TV revolution brought us TV cooks and the spin-off recipe books. And that brings us to the present day and the invention of computers and the internet, allowing us all to search through massive numbers of recipes like those on the site you are now reading. |
