The History of Recipes
We can track the history of written recipes far back into antiquity, at least as far back as pharonic Egypt, and quite possibly further than that. Interesting though that maybe, sadly, these ancient cook books were just basic pictorial, hieroglyphic or cunieform recipes for food preparation.
In fact, the oldest recipe discovered, according to historians are some clay tablets in the Sumerian language which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel exhilarated. Progressing into Roman times around 25BC a roman called Apicius wrote some documents detailing recipes cooked by wealthy Romans. In his works, Apicius recounts how the meals were separated into appetizers, main meal and dessert, something that is very familiar to us today. Additionally, he tells us how the ancient chefs were skilled in the use of many spices, including a few that are still present in modern kitchens like thyme, rue and asafoetida. Later on in the 1400s, people returning from the crusades brought back many foods and spices from the holy land, including basil and coriander. These new spices and herbs led to an explosion in recipe publications, some of which are kept safe in private collections. By the advent of the twentieth century, cook books are in great demand, as a result of better eduction, people having increased free time and having more money. The introduction of the TV gave us TV cookery programs and the demand for the spin-off recipe books. Which brings us neatly to the present day and the invention of computers and the internet, permitting us all to access massive numbers of recipes like the ones you can find on this web site. |
