1 1/2 cup finely grated carrots
3/4 cup granulated sugar
1/2 cup canola oil
1 cup boiling water
1 1/2 cup wholewheat flour
1/2 cup unsweetened cocoa powder
1 tsp cinnamon
1 1/2 tsp baking powder
1/2 tsp salt
Directions
Pre-heat oven to 350F. In a large bowl, combine carrots, sugar & oil.
Pour water over the mixture. In a separate bowl, combine the rest of
the ingredients. Add to the carrot mixture & mix well. Pour into a
lightly oiled & floured 8" square pan. Bake for 35 minutes.

The History of Recipes
It is quite possible to track the history of recipes back into the distant past, in fact as far into history as the early Egyptians, and maybe further still. However, generally, these early records were just basic hieroglyphic or cunieform recipes for meal preparation.
During Roman times 25BC a man called Apicius assembled some documents showing how to cook the recipes enjoyed by his fellow Romans. In his publication, he recounts how the meals of wealthy Romans were split into appetizers, main meal and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius informs us how the Roman chefs used a wide range of herbs and spices, including some that we all recognise like thyme, fennel and asafoetida. During the succeeding few centuries, the powerful families of Europe strove to serve up the most exotic banquets, and as a consequence, the best cooks and their collection of recipes could command a high salary. Nevertheless, it was during the 19th century that haute cuisine and recipe publications became popular. The Famous Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, dedicated their lives to assembling, verifying, and recording recipes that were common in the better off homes of the day. By the time we get to the twentieth century, recipe publications were greatly in demand due to more people being able to read, people having more leisure time and having more money to spend. |
