The History of Recipes
It is quite feasible to trace the history of transcribed cooking instructions way back into ancient history, in truth as far back into history as the ancient Egyptians, and quite possibly further than that. In practice though, in the main part, these early recipes were just simple hieroglyphic instructions for preparing food.
Interestingly, the most ancient recipe found, according to historians is a collection of tablets in Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel exhilarated. Closer to modern times, we have a couple of interesting cookery books dating from the fourteenth century ; one book entitled `Forme of Cury`, and another, similary titled `Curye on Inglish`. The titles are a little misleading though, these books are not about the curry that is popular today, but rather recipes for the types of food enjoyed by the rich and powerful. Later, in the 15th century, knights returning from the crusades brought us many new spices and herbs from the Middle-East, including basil and coriander. The introduction of these new tastes created an increase in manuscripts on cooking, many of which still exist in private collections. During the next few hundred years, the rich families of Europe tried to serve up the most exotic banquets, and as a result the best cooks and their recipe collections were greatly in demand. Notwithstanding that, it wasn`t until the nineteenth century that cooking and recipe collections became really popular. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, devoted their lives to collating, trying out, and publishing the recipes that were being prepared for the better households. Like it or not, the introduction of TV brought us celebrity chefs and the accompanying recipe books. Which brings us neatly up to date and the invention of the internet, permitting everyone to access thousands of recipes like the ones you can find on our site. |
