The History of Recipes
It is quite feasible to follow the history of written cooking instructions far back into the far past, at least as far back into history as the ancient Egyptians, and possibly even further than that. However, mostly, these early cook books were just very basic pictorial instructions for food preparation.
As we move into The time of the romans 25BC a roman called Apicius created a number of documents describing recipes prepared by wealthy roman citizens. In his publication, Apicius tells us how the meals were separated into hors d`oeuvre, main meal and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Additionally, he recounts how the Roman chefs used many different spices, including some familiar names for example bay, rue and asafoetida. During the succeeding few centuries, the families of Europe competed with each other to offer the most exotic meals, and as a result cooks and their recipe collections became highly prized. Even so, it wasn`t until the 19th century that fine cookery and cookery books reached a high level of popularity. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, devoted their lives to collating, testing, and writing down recipes common in their social group. By the time we get to the twentieth century, cookbooks were in great demand, mostly due to increased literacy, people having more free time and disposable income. |
