1 1/2 sticks unsalted butter
1/3 cup brown sugar
1/3 cup sugar
1 egg
1 tsp vanilla
1 tsp peppermint extract
1 1/2 cup flour
1/4 cup unsweetened cocoa
1 tsp baking soda
1 cup chocolate chips
Directions
Preheat oven to 350 and grease cookie sheets.
Cream butter and sugars. Beat in egg, vanilla, and peppermint
extracts. Add dry ingredients gradually along with the chocolate
chips. Drop by rounded teaspoons onto greased cookie sheet and bake
10 minutes.
Makes about 3 1/2 dozen.

The History of Recipes
Academics have tracked the existence of recipes way back into the distant past, in truth as far back as pharonic Egypt, and possibly even further. Interesting though that maybe, sadly, these old recipes were just very basic hieroglyphic recipes for food preparation.
In fact, the most ancient recipe found, according to food historians are a few stone tablets in ancient Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel exhilarated. Later on, we find some books dating from the 14th Century - a book published under the title `Forme of Cury`, and another called `Curye on Inglish`. Amusingly, they are unconnected to the indian curry that is served today, but rather accounts of the types of food on the menues of the upper classes of the time. Later on in the 1400s, people returning from the crusades brought back a variety of foods, spices and herbs from the Middle-East, such as coriander, parsley, and basil. These new herbs and spices was responsible for a torrent in books on cookery, the majority of which still exist in private libraries. For the next few years, the powerful and rich houses strove to serve up the most exotic banquets, and as a result cooks and their recipes could command a high salary. Even so, it was during the nineteenth century that cookery and cookery books became really popular. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated the best years of their lives to assembling, trying out, and writing down recipes to allow everyone to enjoy them. By the advent of the twentieth century, cook books are greatly in demand due to increased literacy, people having more free time and having more money to spend. The introduction of the TV gave us TV chefs and the accompanying recipe books. Which pretty much brings us up to date and the internet revolution, permitting us all to search through massive numbers of recipes like those on sites such as the one you are reading now. |
