The History of Recipes
Written recipes as an idea can be found way back into history, certainly as far into history as the ancient Egyptians, and possibly even further than that. However, generally, these old records were just primitive hieroglyphic instructions for preparing food.
Progressing into The time of the roman empire around 25BC a roman called Apicius created a collection of documents detailing recipes prepared by the Romans. He describes how the meals of wealthy Romans were split into hors d`oeuvres, main course and dessert, a very modern way of dining. Aspicius also recounts how the Romans used a good variety of aromatic flavours, including some familiar names for example bay, mint and parsley. Over the following few centuries, the rich and powerful families of the West competed to lay on the most exotic meals, and as a result the best cooks and their recipes became highly prized. Notwithstanding that, it wasn`t until the nineteenth century that fine cookery and recipe books reached a high level of popularity. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, dedicated their lives to collecting, trying out, and writing down the recipes of their peers. When we get to the 1900s, cookery books are highly popular mostly as a result of increased literacy, people having more leisure time and disposable income. |
