The History of Recipes
Written cooking instructions as a concept can be tracked back into ancient history, at least as far back as ancient Egypt, and maybe further still. In practice though, in the main part, these ancient recipes were just very basic hieroglyphic instructions for preparing food.
In an interesting twist, the oldest recipe discovered, according to historians are some clay tablets in ancient Sumerian which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel blissful. Later on, in The time of the romans 25BC a man called Apicius created some documents detailing recipes cooked by wealthy roman citizens. In his publication, Apicius tells us how the roman meals were separated into starters, main meal and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius also recounts how the Roman chefs were skilled in the use of a wide range of spices, including a few you will know for example basil, fennel and parsley. Over the succeeding few centuries, the rich families of the West competed to offer the most exotic meals, and consequentially the best cooks and their collection of recipes were much in demand. Notwithstanding that, it was during the 19th century that cookery and cookery books rose to prominence. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, spent years to assembling, testing, and publishing the recipes of their peers. The TV revolution brings us TV cookery programs and the recipe books that accompanied them. Which brings us neatly to the present day and the invention of the internet, allowing us all to access thousands of recipes just like those on this recipe site. |
