The History of Recipes
Food historians have tracked the existance of recipes way back into the far past, in fact as far as the ancient Egyptians, and possibly even further than that. In practice though, generally, these old records were just very simple hieroglyphic recipes for preparing meals.
Interestingly, the most ancient recipe in existence, according to food historians is a series of stone tablets in Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel blissful. As our culinary historical trip moves on a few more years we have two books which date from the 14th Century : a book called `Forme of Cury`, and another, similary titled `Curye on Inglish`. Don`t be fooled by the titles though, these two books are unconnected to the spicy food that is popular today, but rather accounts of the types of food cooked for the rich and wealthy people of those days. In the fifteenth century, knights returning from the crusades brought back many new spices and herbs from Arab cooking, such as basil and rosemary. These new culinary innovations led to an eruption in cookery books, many of which are now in private cookery archives. During the succeeding few hundred years, the upper-class families of Europe strove to lay on the most exotic meals, and as a consequence, cooks and their collection of recipes could command a high salary. Notwithstanding that, it was during the 19th century the formal cooking and recipe collections rose to prominence. Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the USA, dedicated their lives to collecting, trying out, and recording recipes common in their social group. By the arrival of the 20th century, cooking books are starting to become popular mostly due to more people being able to read, people having more free time and having more money to spend. Like it or not, the introduction of television brings us celebrity TV chefs and the recipe books that accompanied them. Which pretty much brings us to the present day and the invention of the internet, allowing us all to search through thousands of recipes such as those found on sites such as the one you are reading now. |
