The History of Recipes
It is quite possible to track the history of recipes back into the far past, in fact as far back into recorded history as the Egyptians, and possibly even further than that. Interesting though that maybe, generally, these early recipes were just basic hieroglyphic or cunieform recipes for meal preparation.
Interestingly, the most ancient recipe discovered so far, according to academics is a series of ancient tablets in the Sumerian language which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel wonderful and blissful. During Roman times 25BC a man called Apicius created a number of documents showing how to cook the recipes prepared by his fellow Romans. In his publication, he recounts how the roman meals were divided into hors d`oeuvres, main meal and afters, a style of dining still practiced today. Aspicius describes how the cooks of Roman times made use of a wide range of spices and herbs, including some familiar names for example bay, fennel and asafoetida. Later, in the 15th century, knights returning from the crusades brought us many new foods, spices and herbs from middle-east cuisine, such as basil and rosemary. These new spices and herbs created an explosion in manuscripts on cookery, many of which are kept safe in private libraries. During the succeeding few centuries, the rich families of Wesstern Europe strove to serve the best banquets, and because of this cooks and their collection of recipes were much in demand. Even so, it wasn`t until the 19th century that cooking and recipe collections reached a high level of popularity. The Famous Mrs Beeton in the UK, and Fannie Farmer in the US, dedicated the best years of their lives to assembling, testing, and writing down the recipes of their peers. By the time we get to the twentieth century, cooking publications are starting to become popular due to higher levels of literacy, people having more free time and having more disposable income. Like it or not, the introduction of TV brings us celebrity TV chefs and the spin-off recipe books. And that brings us to the present day and the invention of computers and the internet, allowing everybody to search through massive numbers of recipes just like those on this site. |
