The History of Recipes
Historians have tracked the existance of recipes way back into antiquity, certainly as far back as early Egypt, and possibly even further. Interesting though that maybe, in the main part, these early cook books were just very simple pictorial, hieroglyphic or cunieform recipes for food preparation.
During the time of the Roman Empire a roman called Apicius compiled a number of documents describing recipes enjoyed by his fellow Romans. In his publication, he tells us how the roman meals were split into appetizers, main meal and dessert, a very modern way of dining. He also recounts how the chefs of Roman times were skilled in the use of many spices and herbs, including a few that will be familiar to modern chefs for example basil, fennel and dill. In the fifteenth century, people returning from the crusades brought us many foods and herbs from the Middle-East, including spices such as parsley, basil and rosemary. The introduction of these new herbs and spices led to an eruption in publications on food, most of which still exist in academic collections. The introduction of television brings us cooking programs and the recipe books that accompanied them. And that pretty much brings us to the present day and the internet revolution, allowing everybody to access thousands of recipes like the ones you can find on this recipe site. |
