11 oz cream cheese, softened
3/4 cup chocolate chips, melted
1/4 cup creme de menthe
1/2 tsp cinnamon
1 1/2 cup coarsely chopped pecans
Directions
In a large bowl combine softened cream cheese, melted chocolate chips,
liquer, and cinnamon. Blend until smooth. Chill at least 2 hours.
Form into ball and roll in chopped nuts. Serve with chocolate wafer
cookies. NOTE: I have also used Baileys or Kaluha instead of the
creme de menthe. Very rich.

The History of Recipes
Written cooking instructions as a concept can be tracked far back into ancient history, in fact as far back into history as pharonic Egypt, and maybe further still. Interesting though that maybe, mostly, these early cook books were just basic hieroglyphic or cunieform recipes for food preparation.
In an interesting twist, the oldest recipe discovered so far, according to academics are a few clay tablets in Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel exhilarated. Continuing our culinary historical journey, there were a couple of cookery books which appeared in the fourteenth century ; a cookery book published under the title `Forme of Cury`, and another, similary named `Curye on Inglish`. Although the titles sound familiar, these books are unconnected to the curry that is popular today, but instead descriptions of the types of food on the tables of the nobility of that period. Later on, in the 15th century, people returning from the crusades brought us a variety of foods and herbs from middle-east cuisine, including spices like rosemary and coriander. The introduction of these new herbs and spices created an eruption in manuscripts on cooking, many of which are kept safe in private collections. Over the succeeding few hundred years, the rich and powerful families of Wesstern Europe competed to lay on the most exotic meals, and because of this the best chefs and their recipe collections were much in demand. Even so, it wasn`t until the 19th century that cooking and recipe collections reached a high level of popularity. Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, devoted their lives to assembling, verifying, and recording the recipes of their peers. The TV revolution brings us TV cooks and the recipe books that accompanied them. Which brings us neatly up to date and the invention of computers and the internet, permitting us all to access thousands of recipes just like those on this web site. |
