The History of Recipes
Written cooking instructions as a concept can be found back into antiquity, certainly as far as the ancient Egyptians, and quite possibly further than that. However, sadly, these early cook books were just very simple hieroglyphic recipes for preparing food.
Progressing into The time of the roman empire around 25BC a man called Apicius compiled a collection of documents detailing recipes prepared by wealthy roman citizens. In his works, he describes how the meals were split into hors d`oeuvre, main course and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius also describes how the Roman cooks used many spices and herbs, including a few that will be familiar to modern cooks like thyme, fennel and asafoetida. In the 15th century, the Crusaders brought back a variety of spices and herbs from the holy land, including coriander, parsley, basil and rosemary. These new herbs and spices prompted an increase in manuscripts on cooking, the majority of which are now in academic collections. When we get to the 1900s, recipe publications were highly popular mostly due to better eduction, people having increased free time and having more money. |
