The History of Recipes
We can trace the history of written recipes way back into the far past, in fact as far into history as the ancient Egyptians, and maybe further still. In practice though, in the main part, these old recipes were just very simple pictorial recipes for preparing meals.
In fact, the most ancient recipe in existence, according to historians is a series of clay tablets in ancient Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel blissful. Later on, in Roman times around 25BC a roman called Apicius assembled a collection of scripts showing how to cook the recipes cooked by wealthy roman citizens. In his publication, Apicius describes how the meals of wealthy Romans were separated into appetizers, main meal and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius tells us how the cooks of Roman times made use of many different spices and herbs, including some that we all recognise like basil, fennel and parsley. Later on, we have some interesting books which date from the 14th Century - one book called `Forme of Cury`, and another entitled `Curye on Inglish`. The titles are a little misleading though, these two books are unconnected to the curry that is served today, but instead descriptions of the types of food prepared for the rich and wealthy people of that period. Later on in the 1400s, knights returning from the crusades brought back a variety of spices and herbs from Arab cooking, including coriander, parsley, and basil. The introduction of these new tastes created an eruption in manuscripts on food, the majority of which are kept safe in academic collections. By the advent of the twentieth century, cooking books are greatly in demand mostly due to more people being able to read, people having more spare time and having more money. The introduction of the TV brings us TV chefs and the accompanying recipe books. And that pretty much brings us to the present day and the invention of computers and the internet, allowing everybody to search through massive numbers of recipes like those on this site. |
