The History of Recipes
Food historians have traced the existence of recipes far back into history, in truth as far back into recorded history as pharonic Egypt, and possibly even further than that. In practice though, sadly, these early records were just primitive hieroglyphic or cunieform instructions for preparing food.
Fascinatingly, the most ancient recipe in existence, according to academics are a few clay tablets in ancient Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel exhilarated. Later on, in The time of the romans 25BC a man called Apicius created some scripts showing how to cook the recipes enjoyed by wealthy Romans. In his scrolls, Apicius recounts how the meals were separated into starters, main course and afters, something we still use today. Aspicius tells us how the cooks of his times used many spices and herbs, including a few that will be familiar to modern chefs such as thyme, mint and dill. Over the succeeding few centuries, the upper-class families of Europe strove to serve the most extravagent meals, and as a consequence, the best chefs and their collection of recipes increased in prestige. Notwithstanding that, it was during the nineteenth century the formal cooking and recipe collections really came of age. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the US, dedicated their lives to collating, testing, and publishing recipes for their fellow cooks to enjoy. When we get to the 20th century, cooking books are greatly in demand mostly as a result of more people being able to read, people having increased leisure time and a general increase in wealth. |
