The History of Recipes
Transcribed cooking instructions as an idea can be observed far back into ancient history, in fact as far as the ancient Egyptians, and possibly even further than that. In practice though, in the main part, these early cook books were just very basic hieroglyphic recipes for meal preparation.
Fascinatingly, the most ancient recipe discovered, according to historians is a collection of tablets in Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel `blissful`. Later on, in Roman times 25BC a roman called Apicius wrote some scripts showing how to cook the recipes enjoyed by wealthy Romans. In his scrolls, he tells us how the roman meals were separated into appetizers, main course and afters, a very modern way of dining. Aspicius recounts how the ancient Romans made use of many herbs and spices, including some that we all recognise like thyme, fennel and parsley. In the fifteenth century, people returning from the crusades brought back a variety of foods and spices from the holy land, such as basil and rosemary. These new foods and spices led to a torrent in manuscripts on cooking, most of which still exist in academic collections. During the succeeding few hundred years, the powerful and wealthy houses strove to serve the most extravagent banquests, and consequentially cooks and their collection of recipes increased in prestige. Nevertheless, it was during the nineteenth century that formal cookery and recipe books became really popular. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, dedicated years of their lives to collecting, verifying, and writing down recipes to help cooks of their time. By the arrival of the 1900s, cook books are greatly in demand as a result of better eduction, people having more spare time and a general increase in wealth. |
