The History of Recipes
It is quite feasible to track the history of transcribed cooking instructions way back into history, at least as far as the early Egyptians, and maybe further still. In practice though, generally, these early cook books were just basic hieroglyphic instructions for preparing meals.
Interestingly, the oldest recipe in existence, according to experts are a few clay tablets in Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel wonderful and blissful. Moving on, there were a couple of interesting books dating from the 14th Century - a recipe book published under the title `Forme of Cury`, and another, similary titled `Curye on Inglish`. Don`t be fooled by the titles though, these two books are unconnected to the indian food that is popular today, but instead recipes for the types of meals served to the upper classes of those days. During the next few hundred years, the upper-class families of the West competed with each other to serve up the most exotic banquets, and as a consequence, the best cooks and their recipes became highly prized. Notwithstanding that, it was during the nineteenth century that haute cuisine and recipe collections rose to prominence. The Famous Mrs Isabella Beeton in the UK, and Fannie Farmer in the US, devoted much of their lives to assembling, trying out, and publishing the recipes that were being prepared for the better households. By the advent of the 1900s, cookery publications are in high demand, due to more people being able to read, people having more spare time and disposable income. |
