The History of Recipes
It is quite possible to follow the history of written cooking instructions way back into the distant past, in truth as far back as the Egyptians, and quite possibly further than that. In practice though, generally, these ancient records were just primitive pictorial, hieroglyphic or cunieform instructions for food preparation.
As we move into Roman times around 25BC a man called Apicius assembled a number of documents which described recipes cooked by his fellow Romans. In his publication, Apicius recounts how the meals were separated into appetizers, main meal and dessert, a style of dining still practiced today. This early Roman chef describes how the cooks of Roman times were skilled in the use of many different spices, including some that we all recognise for example thyme, fennel and asafoetida. During the following few centuries, the powerful families of Wesstern Europe tried to offer the best banquets, and as a consequence, the best chefs and their recipe collections were highly sought after. Notwithstanding that, it was during the 19th century that fine cookery and recipe collections reached a high level of popularity. The Famous Mrs Beeton in the UK, and Fannie Farmer in the US, devoted much of their lives to collating, testing, and writing down recipes common in their social group. By the advent of the 1900s, recipe books are starting to become popular due to more people being able to read, people having increased free time and being a little richer. |
