The History of Recipes
It is quite possible to follow the history of transcribed cooking instructions way back into antiquity, certainly as far into history as early Egypt, and possibly even further. In practice though, mostly, these ancient cookbooks were just simple pictorial instructions for preparing food.
In fact, the oldest recipe discovered, according to academics is a series of stone tablets in ancient Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel `wonderful`. Later on, in The time of the romans 25BC a man called Apicius created some documents detailing recipes prepared by the Romans. In his works, Apicius tells us how the meals were divided into starters, main meal and dessert, a style of dining still practiced today. This early Roman chef recounts how the ancient Romans used a wide range of spices, including a few that will be familiar to modern cooks like thyme, rue and asafoetida. Over the succeeding few centuries, the rich families of the West competed to lay on the most extravagent meals, and as a result the best cooks and their recipe collections were much in demand. Even so, it was during the 19th century that fine cookery and recipe collections became popular. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the USA, devoted their lives to assembling, testing, and publishing recipes to help cooks of their time. The TV revolution brings us TV cooks and the demand for the accompanying recipe books. Which brings us neatly up to date and the internet revolution, permitting everyone to access thousands of recipes just like those on this web site. |
