The History of Recipes

Aspicius also informs us how the cooks of Roman times made use of many different spices and herbs, including a few that will be familiar to modern chefs for example thyme, fennel and parsley. Over the next few centuries, the rich and powerful families of Wesstern Europe competed with each other to serve up the best banquets, and as a consequence, chefs and their recipes could command a high salary. However, it was during the nineteenth century the formal cooking and recipe books reached a high level of popularity. Mrs Isabella Beeton in the UK, and Fannie Farmer in the US, dedicated years of their lives to assembling, testing, and publishing recipes of the day. By the arrival of the twentieth century, cookery publications are in high demand, due to more people being able to read, increased leisure time and having more money to spend. |
