The History of Recipes
We can read the history of `recipes` far back into antiquity, certainly as far back into history as the ancient Egyptians, and possibly even further than that. Interesting though that is, sadly, these early cookbooks were just basic pictorial, hieroglyphic or cunieform recipes for preparing food.
Later on, in Roman times around 25BC a roman called Apicius wrote a number of scripts detailing recipes enjoyed by the Romans. In his works, he recounts how the meals were split into appetizers, main meal and dessert, a style of dining still practiced today. Aspicius recounts how the cooks of Roman times made use of a wide range of aromatic flavours, including some that we all recognise such as thyme, rue and asafoetida. For the next few years, the powerful and rich houses competed to serve up the most exotic meals, and as a result cooks and their recipes increased in prestige. However, it was during the 19th century that haute cuisine and recipe collections became really popular. The Famous Mrs Beeton in the UK, and Fannie Farmer in the US, dedicated the best years of their lives to assembling, trying out, and writing down the recipes that were being prepared for the better households. By the advent of the twentieth century, cook books are highly popular mostly due to increased literacy, people having more free time and a general increase in wealth. |
