The History of Recipes
Written recipes as a concept can be traced far back into history, in fact as far back into recorded history as early Egypt, and possibly even further. Interesting though that maybe, mostly, these ancient cookbooks were just very simple pictorial, hieroglyphic or cunieform instructions for preparing meals.
In fact, the oldest recipe found, according to experts in ancient history is a series of ancient tablets in the Sumerian language which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel exhilarated. Later on, there were two recipe books which were published in the fourteenth century - a book called `Forme of Cury`, and another called `Curye on Inglish`. Surprisingly, they are not about the spicy food that is familiar to us all today, but rather descriptions of the types of meals enjoyed by the nobility of the time. Later on in the 1400s, knights returning from the crusades brought back many foods and herbs from the East, including spices like coriander, parsley, and rosemary. These new herbs and spices led to a torrent in manuscripts on cookery, many of which still exist in academic collections. For the next few years, the upper-class families of the West competed to serve up the most extravagent meals, and as a result the best chefs and their recipes increased in prestige. Nevertheless, it was during the nineteenth century that cooking and recipe collections really came of age. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, dedicated the best years of their lives to assembling, verifying, and writing down recipes of the day. By the advent of the twentieth century, cookery publications were in great demand, mostly as a result of increased literacy, people having increased free time and a general increase in wealth. The introduction of the TV brings us TV cookery programs and the demand for the accompanying recipe books. And that neatly brings us to the present day and the invention of computers and the internet, permitting everyone to search through massive numbers of recipes just like those on our web site. |
