The History of Recipes
Written recipes as a concept can be traced way back into antiquity, in fact as far back as early Egypt, and potentially, even further back. Having said that, these, ancient cookbooks were just primitive hieroglyphic or cunieform recipes for meal preparation.
In an interesting twist, the most ancient recipe discovered, according to academics is a collection of tablets in Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel wonderful. Much later, in Roman times a roman called Apicius compiled a number of documents showing how to cook the recipes cooked by his fellow Romans. In his publication, Apicius tells us how the roman meals were split into hors d`oeuvres, entrees and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef describes how the ancient chefs made use of many different aromatic flavors, including some familiar names for example thyme, rue and dill. During the next few centuries, the wealthy families of Wesstern Europe competed with each other to lay on the most exotic banquets, and consequentially cooks and their recipes could command a high salary. However, it was during the nineteenth century the formal cooking and recipe books became really popular. Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, devoted much of their lives to collating, verifying, and publishing the recipes of their peers. By the advent of the 20th century, recipe publications are in high demand, mostly due to better eduction, people having more spare time and having more money to spend. |
