The History of Recipes
Historians have traced the existence of recipes back into history, certainly as far back into recorded history as the Egyptians, and maybe further still. In practice though, these, early cook books were just basic pictorial instructions for preparing meals.
Fascinatingly, the oldest recipe discovered, according to Professor Solomon Katz, are a few stone tablets in ancient Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel blissful. Progressing into The time of the romans 25BC a man called Apicius compiled a number of scripts detailing recipes enjoyed by wealthy Romans. In his publication, he tells us how the meals of wealthy Romans were split into appetizers, main meal and dessert, a style of dining still practiced today. This early Roman chef informs us how the early Romans made use of a wide range of spices and herbs, including a few you will know like bay, rue and parsley. As our culinary historical trip moves to more modern times there are a couple of recipe books from the 14th Century : one book published under the title `Forme of Cury`, and another called `Curye on Inglish`. Despite their titles, these two books have no connection with the indian food that is popular today, but rather accounts of the types of food prepared for the rich and wealthy people of that time. In the 15th century, knights returning from the crusades brought us a variety of foods, spices and herbs from the holy lands, including basil and rosemary. The introduction of these new tastes created an explosion in recipe manuscripts, many of which are now in private cookery archives. Over the following few centuries, the wealthy families of Wesstern Europe competed to serve the best banquets, and consequentially the best cooks and their collection of recipes were greatly in demand. However, it was during the 19th century that fine cookery and recipe collections became really popular. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated years of their lives to assembling, testing, and publishing recipes to allow everyone to enjoy them. By the arrival of the twentieth century, recipe publications are highly popular due to better eduction, people having more leisure time and being a little richer. The introduction of television brought us TV cooks and the spin-off recipe books. Which brings us neatly up to date and the invention of the internet, permitting everybody to search through thousands of recipes just like those on this site. |
