The History of Recipes
We can trace the history of written recipes far back into antiquity, in fact as far as ancient Egypt, and possibly even further. However, in the main part, these early recipes were just simple pictorial recipes for preparing food.
In fact, the most ancient recipe discovered so far, according to food historians is a series of stone tablets in ancient Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel exhilarated. Later on, we find two books which date from the 1300s : a cookery book called `Forme of Cury`, and another entitled `Curye on Inglish`. Surprisingly, these have no connection with the indian curry that we all know today, but instead recipes for the types of meals enjoyed by the rich and wealthy people of the time. For the next few years, the powerful and wealthy houses strove to lay on the most exotic meals, and because of this chefs and their collection of recipes were at a premium. Nevertheless, it wasn`t until the 1800s that cookery and recipe books reached a high level of popularity. Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the USA, dedicated years of their lives to collecting, testing, and publishing the recipes that were being prepared for the better households. By the time we get to the 20th century, recipe publications are increasing in popularity mostly as a result of increased literacy, more leisure time and being a little richer. |
