The History of Recipes
Historians have tracked the existance of recipes way back into history, at least as far back into recorded history as pharonic Egypt, and maybe further still. In practice though, these, ancient recipes were just primitive hieroglyphic or cunieform instructions for food preparation.
Fascinatingly, the oldest recipe found, according to food historians is a series of tablets in the Sumerian language describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel wonderful and blissful. During the time of the Roman Empire a roman called Apicius compiled a few documents describing recipes prepared by his fellow Romans. In his works, he tells us how the roman meals were split into hors d`oeuvre, entrees and dessert, something that is very familiar to us today. He also recounts how the chefs of Roman times were skilled in the use of many different herbs, including a few that will be familiar to modern chefs for example basil, fennel and dill. In the fifteenth century, people returning from the crusades brought us many foods and herbs from the Middle-East, including coriander, parsley, and rosemary. The introduction of these new tastes prompted an outbreak in recipe manuscripts, some of which still exist in private cookery archives. By the arrival of the 20th century, cookery publications are in great demand, mostly as a result of increased literacy, more leisure time and having more money to spend. The introduction of television brings us TV cookery programs and the demand for the accompanying recipe books. And that neatly brings us to the present day and the invention of the internet, allowing everyone to access massive numbers of recipes like those on this web site. |
