The History of Recipes
It is possible to trace the history of `recipes` way back into ancient history, in truth as far back as the ancient Egyptians, and maybe further still. Interesting though that maybe, mostly, these old recipes were just basic pictorial instructions for food preparation.
The truth of the matter is, the most ancient recipe in existence, according to academics is a collection of stone tablets in Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel exhilarated and blissful. Later on, in The time of the roman empire 25BC a man called Apicius compiled some scripts which described recipes cooked by the Romans. In his works, Apicius tells us how the roman meals were divided into hors d`oeuvres, main course and afters, something we still use today. He also informs us how the Romans were skilled in the use of a wide range of herbs and spices, including many that are still in use today such as thyme, fennel and parsley. Later, in the fifteenth century, knights returning from the crusades brought us many new spices and herbs from Arab countries, including parsley, basil and rosemary. The introduction of these new herbs and spices caused a torrent in manuscripts on cookery, many of which still exist in private libraries. During the following few hundred years, the rich families of Europe tried to offer the most exotic banquets, and as a consequence, the best cooks and their collection of recipes were much in demand. Even so, it wasn`t until the nineteenth century that cooking and recipe collections really came of age. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, spent years to assembling, verifying, and recording the recipes that were being prepared for the better households. By the time we get to the 1900s, recipe books were starting to become popular mostly due to more people being able to read, people having more leisure time and having more disposable income. |
