6 eggs -- separated
1 1/2 cup sugar
1 cup nuts -- chopped
4 oz bittersweet chocolate --
1 grated
2 apples -- peeled & grated
1/2 cup matzo meal
Directions
Beat yolds and sugar till light. Add nuts, chocolate, apples and
matza meal.
Beat whites till stiff and fold in. Pour into 9" spri ng form pan.
Bake about 40 min. at 350F.

The History of Recipes
Written recipes as an idea can be traced back into antiquity, at least as far back into recorded history as early Egypt, and possibly even further. Interesting though that is, generally, these early records were just simple hieroglyphic or cunieform instructions for preparing meals.
Later on, in The time of the romans 25BC a man called Apicius compiled a collection of documents describing recipes enjoyed by wealthy Romans. In his publication, he tells us how the roman meals were separated into hors d`oeuvre, entrees and desserts, a very modern way of dining. Aspicius tells us how the ancient chefs made use of a wide range of herbs and spices, including a few that are still present in modern kitchens for example thyme, rue and parsley. Over the succeeding few centuries, the powerful families of Europe competed with each other to serve up the most extravagent meals, and because of this cooks and their recipe collections were greatly in demand. However, it wasn`t until the 1800s that cookery and recipe books really came of age. The Famous Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, dedicated the best years of their lives to assembling, verifying, and recording recipes common in their social group. When we get to the 20th century, cooking books were in high demand, mostly as a result of higher levels of literacy, more free time and having more money. |
