The History of Recipes
Historians have proved the existance of recipes way back into the far past, certainly as far back into recorded history as the ancient Egyptians, and quite possibly further than that. However, these, old cookbooks were just very simple pictorial, hieroglyphic or cunieform recipes for preparing meals.
Interestingly, the oldest recipe found, according to academics are a few tablets in ancient Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel exhilarated. During Roman times around 25BC a roman called Apicius assembled a collection of scripts detailing recipes enjoyed by wealthy Romans. In his works, he recounts how the meals of wealthy Romans were split into hors d`oeuvres, main meal and desserts, something that is very familiar to us today. Additionally, he recounts how the ancient Romans made use of a good variety of spices and herbs, including some that we all recognise such as thyme, rue and dill. As our culinary historical trip moves on a few more years we have a couple of recipe books which date from the fourteenth century ; a cookery book published under the title `Forme of Cury`, and another, similary called `Curye on Inglish`. Perhaps surprisingly, these books have no connection with the indian curry that appears on menues today, but instead accounts of the types of food on the menues of the rich and powerful of those days. In the fifteenth century, knights returning from the crusades brought back a variety of spices and herbs from the Middle-East, including basil and coriander. The introduction of these new foods and spices caused an explosion in books on cooking, some of which are kept safe in private cookery archives. By the arrival of the 1900s, cooking books are highly popular mostly due to increased literacy, more leisure time and having more disposable income. Like it or not, the introduction of television brings us TV cooks and the recipe books that accompanied them. Which pretty much brings us up to date and the internet revolution, permitting everyone to search through thousands of recipes such as those found on this site. |
