The History of Recipes
Historians have proved the existence of recipes far back into the distant past, certainly as far into history as the Egypt of the Pharoahs, and maybe further still. Having said that, generally, these ancient records were just primitive pictorial, hieroglyphic or cunieform recipes for preparing food.
Fascinatingly, the oldest recipe found, according to Professor Solomon Katz, is a collection of clay tablets in Sumerian describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel blissful. Progressing into The time of the romans 25BC a roman called Apicius created a collection of scripts describing recipes cooked by his fellow Romans. In his scrolls, he recounts how the meals were split into hors d`oeuvres, main course and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef recounts how the ancient cooks were skilled in the use of a wide range of herbs and spices, including many that are still in use today for example thyme, rue and asafoetida. As our culinary historical trip moves to more modern times there were a couple of interesting recipe books published in the 14th Century : a recipe book entitled `Forme of Cury`, and another, similary named `Curye on Inglish`. Perhaps surprisingly, these books are not about the indian curry that is served today, but rather recipes for the types of food served to the rich people of those days. In the 15th century, people returning from the crusades brought us many foods and spices from the Middle-East, including parsley, basil and rosemary. These new foods and spices caused a torrent in books on cooking, the majority of which are now in private libraries. By the arrival of the twentieth century, cookery books are in high demand, as a result of increased literacy, people having more spare time and being a little richer. |
