The History of Recipes
It is quite feasible to trace the history of transcribed cooking instructions back into the distant past, in truth as far back into history as the early Egyptians, and maybe even further. Interesting though that maybe, in the main part, these ancient records were just simple pictorial, hieroglyphic or cunieform recipes for preparing meals.
Interestingly, the most ancient recipe discovered so far, according to food historians is a collection of tablets in ancient Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel `exhilarated, wonderful and blissful`. As we move into The time of the romans 25BC a man called Apicius assembled some documents which described recipes enjoyed by wealthy roman citizens. In his publication, he tells us how the roman meals were split into appetizers, main meal and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef tells us how the Roman chefs made use of a good variety of spices, including a few that will be familiar to modern cooks for example basil, fennel and parsley. Later, in the 15th century, the Crusaders brought back many new foods, spices and herbs from middle-east cuisine, including spices such as coriander, parsley, and rosemary. The introduction of these new herbs and spices led to an eruption in recipe publications, some of which still exist in private collections. During the next few hundred years, the powerful families of Europe tried to serve the best banquets, and because of this chefs and their recipes were at a premium. Even so, it was during the 19th century that haute cuisine and recipe publications really came of age. Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, dedicated years of their lives to collecting, testing, and publishing recipes common in their social group. By the time we get to the twentieth century, recipe publications were increasing in popularity due to higher levels of literacy, increased leisure time and having more money to spend. Like it or not, the introduction of TV brought us celebrity chefs and the spin-off recipe books. Which pretty much brings us to the present day and the invention of computers and the internet, allowing us all to search through thousands of recipes such as those found on this recipe site. |
