The History of Recipes
Food historians have traced the existence of recipes way back into history, certainly as far back as the ancient Egyptians, and possibly even further than that. However, in the main part, these old recipes were just very basic hieroglyphic instructions for preparing food.
Fascinatingly, the oldest recipe discovered, according to Professor Solomon Katz, is a series of stone tablets in Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel blissful. As our culinary historical trip moves on a few more years there were a couple of interesting recipe books which date from the 14th Century ; one book called `Forme of Cury`, and another, similary titled `Curye on Inglish`. Surprisingly, these books are nothing to do with the indian food that we all know today, but rather recipes for the types of meals on the tables of the rich and wealthy people of the period. In the fifteenth century, knights returning from the crusades brought back many spices and herbs from the holy lands, such as rosemary and coriander. These new herbs and spices caused a surge in recipe publications, the majority of which are now in private collections. Over the following few hundred years, the upper-class families of the West competed with each other to lay on the most exotic banquets, and consequentially cooks and their recipe collections were highly sought after. Nevertheless, it wasn`t until the 1800s that haute cuisine and cookery books rose to prominence. Mrs Beeton in the UK, and Fannie Merritt Farmer in the US, dedicated years of their lives to assembling, verifying, and writing down recipes to allow everyone to enjoy them. The introduction of television brings us cooking programs and the accompanying recipe books. Which brings us neatly to the present day and the internet revolution, allowing everyone to search through massive numbers of recipes just like those on the site you are now reading. |
