The History of Recipes
It is possible to trace the history of written recipes far back into history, in fact as far back into recorded history as ancient Egypt, and maybe even further. Interesting though that is, in the main part, these old cook books were just basic pictorial, hieroglyphic or cunieform recipes for meal preparation.
The truth of the matter is, the most ancient recipe discovered so far, according to experts are a few ancient tablets in the Sumerian language which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel wonderful. Later on, in The time of the roman empire around 25BC a roman called Apicius wrote a number of documents showing how to cook the recipes enjoyed by wealthy Romans. In his works, he describes how the meals were separated into hors d`oeuvres, main meal and desserts, a style of dining still practiced today. Aspicius describes how the ancient chefs used many aromatic flavours, including a few that are still present in modern kitchens like thyme, mint and parsley. Later, in the fifteenth century, people returning from the crusades brought back a variety of foods and herbs from middle-east cuisine, including spices such as coriander, parsley, and basil. These new foods and tastes caused an eruption in cookery books, many of which are now in private libraries. During the following few hundred years, the powerful and rich houses strove to serve the most exotic meals, and because of this chefs and their recipes became highly prized. However, it wasn`t until the 19th century the formal cooking and recipe collections rose to prominence. The Famous Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, devoted their lives to collecting, trying out, and recording recipes to help cooks of their time. By the time we get to the 1900s, cook books were greatly in demand mostly as a result of higher levels of literacy, leisure time and disposable income. The arrival of television gave us TV chefs and the recipe books that accompanied them. And that brings us to the present day and the internet revolution, permitting us all to access thousands of recipes like the ones you can find on sites such as the one you are reading now. |
