The History of Recipes
It is quite feasible to track the history of transcribed cooking instructions way back into the far past, in truth as far as the early Egyptians, and maybe further still. Interesting though that maybe, in the main part, these old recipes were just very simple pictorial, hieroglyphic or cunieform recipes for preparing meals.
Interestingly, the most ancient recipe discovered so far, according to experts in ancient history is a collection of stone tablets in the Sumerian language describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel wonderful and blissful. Progressing into The time of the romans around 25BC a man called Apicius created some scripts which described recipes prepared by wealthy roman citizens. In his scrolls, he recounts how the meals of wealthy Romans were separated into appetizers, main meal and afters, a style of dining still practiced today. He also describes how the Romans used many different spices, including some familiar names such as basil, rue and dill. Later, in the 15th century, knights returning from the crusades brought back many new spices and herbs from middle-east cuisine, including rosemary and coriander. The introduction of these new herbs and spices created an eruption in manuscripts on cookery, many of which are kept safe in private collections. During the next few hundred years, the upper-class families of Europe tried to lay on the most exotic banquets, and because of this the best cooks and their recipe collections increased in prestige. Even so, it was during the 19th century that cooking and recipe collections reached a high level of popularity. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, dedicated their lives to collating, testing, and writing down recipes for their fellow cooks to enjoy. By the advent of the 1900s, cooking books are increasing in popularity mostly due to higher levels of literacy, people having more leisure time and a general increase in wealth. |
