The History of Recipes
It is quite possible to follow the history of transcribed cooking instructions far back into distant history, in truth as far back into recorded history as early Egypt, and quite possibly further than that. However, sadly, these old records were just basic hieroglyphic recipes for meal preparation.
Progressing into Roman times around 25BC a roman called Apicius wrote a collection of documents which described recipes prepared by the Romans. In his works, Apicius describes how the meals were divided into hors d`oeuvre, main course and afters, a style of dining still practiced today. He also informs us how the ancient Romans used many aromatic flavours, including a few that are still present in modern kitchens like basil, rue and asafoetida. Later on in the 1400s, people returning from the crusades brought back many new foods and herbs from Arab countries, including spices like rosemary and coriander. These new herbs and spices prompted a torrent in manuscripts on cookery, many of which still exist in private cookery archives. The introduction of the TV gave us celebrity chefs and the demand for the accompanying recipe books. And that pretty much brings us to the present day and the invention of the internet, permitting everyone to search through thousands of recipes like the ones you can find on sites such as the one you are reading now. |
