The History of Recipes
Written cooking instructions as a concept can be traced way back into history, certainly as far back into history as the ancient Egyptians, and maybe even further. In practice though, mostly, these early records were just very basic hieroglyphic recipes for preparing meals.
Fascinatingly, the oldest recipe found, according to academics are a few stone tablets in Sumerian describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel `exhilarated, wonderful and blissful`. As our culinary historical trip moves to more modern times there were a couple of recipe books dating from the 1300s : a cookery book published under the title `Forme of Cury`, and another, similary named `Curye on Inglish`. The titles are a little misleading though, these two books are unconnected to the indian food that we all know today, but rather descriptions of the types of food prepared for the nobility of that time. Over the following few centuries, the rich and powerful families of Europe competed to serve the most exotic banquets, and as a result chefs and their collection of recipes were much in demand. Notwithstanding that, it was during the nineteenth century that haute cuisine and cookery books became really popular. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated years of their lives to collecting, testing, and recording recipes of the day. When we get to the 1900s, cookery publications are highly popular mostly due to increased literacy, leisure time and having more disposable income. The arrival of TV brings us TV cooks and the accompanying recipe books. And that pretty much brings us to the present day and the internet revolution, permitting us all to search through thousands of recipes like the ones you can find on this site. |
