1 1/2 cup plus 2 t unsweet cocoa
1 powder
3 1/4 cup granulated sugar
1 1/3 cup cornstarch
1/2 tsp salt
Directions
In a large bowl, combine all ingredients. Stir with a wire whisk until
blended. Pour into a 6-cup container with a tight-fitting lid. Seal
container. Label with date and contents. Store in a cool, dry place.
Use within 3 or 4 months. Makes about 6 cups mix.

The History of Recipes
We are able to read the history of written recipes back into antiquity, at least as far back into history as early Egypt, and quite possibly further than that. Interesting though that is, sadly, these old records were just simple pictorial, hieroglyphic or cunieform recipes for preparing food.
As we move into The time of the romans around 25BC a man called Apicius compiled a collection of documents describing recipes prepared by wealthy Romans. He recounts how the meals of wealthy Romans were separated into appetizers, entrees and dessert, a very modern way of dining. Aspicius also informs us how the cooks of Roman times made use of a wide range of herbs, including a few you will know for example bay, fennel and dill. During the next few centuries, the powerful families of Europe competed with each other to offer the most exotic meals, and as a consequence, the best cooks and their recipes were highly sought after. However, it was during the 1800s that haute cuisine and recipe books reached a high level of popularity. Mrs Beeton in the UK, and Fannie Farmer in the US, dedicated the best years of their lives to assembling, verifying, and writing down recipes of the day. By the advent of the 20th century, cooking books were in great demand, mostly as a result of more people being able to read, people having increased free time and being a little richer. |
